JAMAICAN BANANA BREAD



*Ingredients

°2 cups all-purpose flour
°3/4 teaspoon baking soda
°1/2 teaspoon of salt
°1 cup sugar
°1/4 c butter, softened
°2 eggs
°1 1/2 c mash ripe banana 
°1/4 cup low-fat plain yogurt (or pina colada flavored!!)
°3 tablespoons dark rum OR apple cider
°1/2 teaspoon vanilla extract
°1/2 cup sweetened flaked coconut
+Cooking spray
°1 tablespoon sweetened flaked coconut
°1/2 cup powdered sugar
°1 1/2 tablespoons fresh lime or lemon juice

*Instructions

Preheat the oven to 350°.
Lightly pour flour into dry measuring cups; level with a knife. Mixing flour, baking soda also salt, stir with  whisk.
Place granulated sugar and butter in large bowl; beat with mixer on medium speed until well blended. Add the eggs, one at a time, beating well after each addition. Adding banana, yogurt, rum & vanilla; beat to mixed. Add flour mixture; beat on low speed until moistened. Stir in 1/2 cup coconut. Pour batter into 9x5-inch loaf pan sprayed with cooking spray; sprinkle with 1 tablespoon of coconut. Bake at 350° for 1 hour or until a wooden pick inserted in the center comes out clean. Cool in pan 10 minutes on a wire rack; remove from skillet. Combine powdered sugar and juice, stirring with a whisk; drizzle with warm bread. Cool completely on a wire rack.
