BURGER PEPPERS & ONION GYROS





*Ingredients:

°1-1/2 ground beef
°1/4 tsp salt
°1/4 teaspoon pepper, or to taste
°3 teaspoons olive oil
°2 cups green or red bell pepper, OR 1 cup each, coarsely chopped
°1 small can RoTel Sweet OR Hot Diced Tomatoes with Chopped Peppers, drained
°1 cup coarsely chopped onion
°4 whole pita breads, warmed and softened in the microwave
°1/2 cup sour cream mixed with 1/4 cup crumbled blue cheese, optional
°4 12×12 sheet aluminum foil

* Methods  :

Cooking ground beef to no pink remains. Adding olive oil, peppers also onions to ground beef & sauté to onions become translucent & peppers are soft.
Add RoTel tomatoes and peppers, mix and heat through. Check the salt and pepper and adjust to your liking.
Dampen a few paper towels with water and wrap the pita bread in them. Put them in the microwave and heat them until they become easily malleable.
Place a pita bread on a sheet of aluminum foil and add a generous portion, about 1/4 of the mixture of ground beef, onions, peppers and tomatoes to the warmed pita bread. 
Roll foil and pita bread gyro style and add sour cream and blue cheese as toppings if desired.
Repeat this operation with the remaining 3 pita breads
