Southern Fried Salmon Patties




*What you will need

°1 can / 7 ounces of salmon
°1 egg (lightly beaten)
°1/2 c breadcrumbs 
°1/2 tsp salt (plus more for sprinkling)
°1/2 teaspoon of pepper
°1 onion (diced)

*How to do it

Remove skin & bones from salmon; flake & drain well.
In a mixing bowl, mix the salmon with the egg, breadcrumbs, salt, pepper and onion.
Making patties for 2 inches in diameter.
Heat oil in  skillet on medium heat. Fry the salmon patties in hot oil for about 8-10 minutes, browning them on both sides.
Lightly sprinkle the salmon patties with salt before serving.
Tips and Variations
Quick Cucumber Sauce: In a bowl, combine 1/2 cup sour cream with 1/2 to 3/4 cup chopped cucumber, 1 tsp apple cider vinegar, 1/2 tsp dehydrated dill, 1/4 teaspoon of salt and a pinch of onion powder.  
Add a few tablespoons of finely chopped celery to the salmon mixture with the onion.
Add about 1/2 to 1 teaspoon of dried dill and a pinch of garlic powder along with salt and pepper
